DipTacular '11

One of my favorite blogs to read (of someone whom I don't actually know in real life) is BooMama.  She is a fellow Southern gal who also loves football (although Mississippi State is her school of choice...bless her heart) and is generally hilarious.  Today she is hosting a dip recipe sharing event and I'm excited to see what everyone has to offer!  I love dips to have around the house for snacking and, of course, to eat with burgers or chicken or the like while watching football.  Here are two of my favorite that could not be any easier.

The Dip
(I don't know what the real name is for this.  In the Curran house growing up, it was and is simply known as The Dip.  And we have it every time we have hamburgers which is quite often.)

One 8 oz. stick of cream cheese
Salsa (as much or as little as you want, depending on the consistency and flavor you prefer)

Start by softening the cream cheese by leaving it out on the counter for a bit.  Then add some salsa (I would start with 1/2 cup).  Mix with a mixer until cream cheese is smooth.  Taste.  If it tastes amazing, then it is done!  If it needs more kick, add some more salsa until your taste buds are happy.  Put it in the fridge and take it out when you're ready to eat.  This is a great dip to eat leftover, too!


Taco Dip
One 8 oz stick of cream cheese
One packet of taco seasoining
1 c. shredded lettuce
1 c. shredded cheddar cheese
Chopped tomatoes (if desired)
Tortilla chips

Soften cream cheese then blend with taco seasoning until smooth.  Spread in a shallow dish.  Top with lettuce, then cheese, then tomatoes (if desired).  Eat with tortilla chips. 

Happy snacking!  Also, did you hear that the Hogs are going to win the national championship??  Woo pig!

Yummy dips! Making me hungry! How do you feel about guacamole?? I was thinking about making that for Saturday!
